Vegetables for Dinner

As I'm sure all mothers and housewives will agree, it's really easy to leave out an important part of dinner: the vegetables. Everyone usually tries to make sure there is always a vegetable dish with dinner, but sometimes, perhaps most times, it just doesn't happen, the extra time it takes is exactly the amount of time you don't have. Here is a really simple idea: squash and sweet potatoes. These two are amoung the very best foods for you in the whole world, and if you're already baking something in the oven for dinner, it only takes 30 seconds to pop them in too.
 
The easiest way to serve squash is to just cut it in half, scoop it out and set it in the pan face down to cook. Then when you're serving, don't even take the time to scoop it out, just serve each person a piece and let them put their own seasonings on it, salt, butter, brown sugar, ect., and eat it right out of
the peel.
As for sweet potatoes (yams), you have to do even less. Just cut them in half and cook, then serve the halves on a plate. If you want to get fancy you can though. Thinnly slice the yams into circles then toss in olive oil, salt, pepper, and spike if you have it. Then put on a cookie sheet to bake. You can add a few baby red potatoes to this too if you want, the combination is great!

Tomato Broccoli Casserole

Crust:
1/2 c. butter or oil
1 1/4 c. flour
2 t. baking powder
1/2 t. salt
1/2 c. plain yogurt
Mix dough and press flat into a greased 9x13 pan.

Filling:
2 c. finely chopped broccoli
1/2 c. diced onion
1 c. grated cheese
2 medium tomatoes, thinnely sliced (1/8-1/4 in.)
1/4 c. mayonnaise
Layer onto crust in oder listed. Spread mayonnaise over tomatoes with spatula. (The oiliness serves to sort of fry the tomatoes while it bakes) Bake at 450 for 10 minutes, then at 350 for 30 minutes.

Chicken Shish Kabobs

Tried making Shish Kabobs in the oven last night and they turned out AMAZING!

1 chicken breast
1/2 bell pepper
1/2 med onion
1 can chunck pineapple
Cut the chicken into cubes and merinade in sauce of your choice (I made my own from olive oil, teriyaki sauce, soy sauce, salt, pepper, lemon juice, garlic powder, rosemary, and basil) Merinade chicken for at least an hour. Cut onion and bell pepper into chuncks and when chicken is removed from merinade, stir vegetables around in the remaining until coated. Stick onto skewers and lay out on a tin foil covered cookie sheet. Place in oven set to high broil for 10 minutes, turn and cook 10 mor minutes or until edges of meat and vegatables begin to brown. Makes 4-6.

Sweet Corn Bread Recipe

1 cup cornmeal
1 1/4 cup white flour
1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 egg lightly beaten
1 cup sour cream
1/3 cup milk
1/4 cup butter, melted
Directions
1.Preheat oven to 400 degrees F (205 degrees C). Lightly grease an 8-inch square baking dish.
2. Combine flour, cornmeal, suger, baking powder, baking soda, and salt in a larg bowl. Mix egg, sour cream, milk, and butter in a small bowl. Fold egg mixture into flour mixture until just moistened; pour into prepared baking dish.
3. Bake in preheated oven until a toothpick inserted near the senter comes out clean,20 to 25 minutes. Serve warm.

Pigs In Blankets

Biscuit Dough

1/2 c. flour
1 tsp. sugar
1/2 T baking powder
Pinch of salt
1 T butter
1/4 c. soured milk (add a few drops of lemon juice to your milk and let sit a few minutes before adding to dough)
6-9 little sausages
When dough is mixed, take a spoonful in your fingers and flatten into rectangle, roll sausage  in it and place on greased cookie sheet. Do the same with the rest of the dough and place in 450* oven for about 12 min.



Sweet Milk Doughnuts

Dough

2 eggs well beaten
1 c. sugar
2 T. softened butter
3/4 c. milk
Mix well then add:
3 1/2 c. white flour
4 tsp baking powder
1/2 tsp salt.
Mix together, should have the consistancy of sugar cookie dough. Chill for 2 hours. Take half of the dough and flatten out in your hands into a circle, lay on floured surface and lightly dust more flour on the top. Roll out until about 1/3 inch thick then cut into circles. (If you do not have a doughnuts cookie cutter, I used a small jar ring and the lid off the oil)
In a large pot heat up oil (2 or 3 inches deep) Drop a small piece of dough in to test, if it bubbles rapidly then it's ready. When the underside starts to show a little brown, turn them over and let boil on other side until brown. Remove from pot and lay on paper towels to cool.



For powdered sugar doughnuts, shake up in a paper or zip lock bag of powdered sugar. For cinnamon sugar, combine 1/2 c sugar and 1 tsp cinnamon in bag and shake doughnuts in it.
